Many chefs prefer wagyu beef from Tajima cattle, due to the meat’s large eye muscle and melt-in-the-mouth fat marbling. But Tajima cattle are small and grow slowly, so only a limited amount of Tajima wagyu is available. Tajima Australian Wagyu cattle are raised in Australia, eating a grain mix designed by Japanese nutritionists. The cattle eat this premium mix of grains, silage, and fresh grass for at least 350 days - longer than many other grain-fed cattle. All feed is also grown on the same farm to ensure traceability.
